Yes, we have been using a lot of ham lately (navy bean soup, ham, green beans, and potatoes, etc.) I made the mistake of grabbing 2 hams out of my freezer and thawing them both, so now I had to use them.
This one turned out great! I have a cheese-loving family, so I modified the original recipe and added in cream cheese, and changed a few things around to make it GF.
Ingredients:
- 8 good-sized potatoes, thinly sliced
- 1 onion, chopped (I eliminated this, since my family isn’t too fond of onions)
- 1 pound cooked, cubed ham
- 1 ounce package GF gravy mix
- 3-1/4 cups water
- 4 tablespoons Cream Soup Dry Mix
- 4 ounces cream cheese
- 1-1/2 cups shredded cheese (cheddar, colby, longhorn, etc.)
Put potatoes, onion, and ham in the crockpot. And note the size of my crockpot. If you have a huge crockpot, you may want to double the recipe, as it would not be very full.
Whisk together dry gravy mix, water, and Cream Soup Dry Mix. Pour over ham and potatoes. Can cook on low for 7-8 hours, or high for 3-4. From when I started it, I had about 5 hours, so I started it on high for 2 hours, then turned it down for the rest of the time.
Add both cheeses in the last 1/2 hour.
We served this with frozen bagged vegetables, and it made a complete meal, and was delicious! Everyone liked it (which is saying a lot – I reside with a family of VERY picky eaters). If everyone likes the same thing, I bookmark that recipe! Maybe laminate it. Maybe even frame it….

I love anything that can be cooked in a crockpot! This looks really, really yummy.
