Gluten Free Blueberry Muffins

Here is the most phenomenal blueberry muffin recipe!  We had not had good blueberry muffins since the celiac diagnosis, so I decided to play around and (hopefully) make something happen.  Here is what we came up with!  You will need:

  • 1/2 cup sugar
  • 4 tablespoons shortening
  • 4 eggs
  • 1 cup milk
  • 1/2 teaspoon vanilla
  • 2 cups GF Flour Mix (or you could try with all rice flour, but we love our GF mix)
  • 1/2 teaspoon salt
  • 1/2 teaspoon xanthan gum
  • 4 teaspoons baking powder
  • 1-2 cups blueberries, depending on your taste (frozen or fresh, either is fine)

You will need a mixer for this recipe.  Normally I don’t consider a recipe “easy” if I have to get out my mixer.  However, the mixing bowl and a spatula are really the only items used, so it wasn’t too bad!

Beat together the sugar, shortening, and eggs.  Add in the milk and vanilla and beat, then add the dry ingredients gradually.  Beat for a few minutes.  Fold in the blueberries.

Pour into muffin cups.

Bake for about 20 minutes, maybe a bit longer depending on your oven, at 350 degrees.

This made a dozen MONSTER muffins.  They were huge!  You could probably get 18 smaller muffins out of this recipe.

Look at these gorgeous muffins!  I eat wheat all the time, and to me, these were absolutely delicious.  Of course, anything is delicious when you lather it in butter as above, but I had 4 with that meal, which I think says something.  The gluten free members of the family loved them, too, of course.

  1. We have always used the Pamela’s muffin recipe with blueberries. Hubby likes that one but the GF baking mix is expensive. This one sounds delicious though. Where can you find xanthan gum that is affordable?

    Xanthan gum affordable? I have always been lucky enough to find it for around a buck, at BB’s, NOT expired. Seriously, that place rocks. If I find a lot, I stock up and freeze it and then it lasts a lot longer. I haven’t paid retail for xanthan gum in about 3 years.

    I hope you can find it at BB’s. I have found it twice and stocked up, but not more often than that. (Sorry to get your hopes up). They key is, I don’t OFTEN find it, it is just that when I do, I take all that I think I will use for a few years. Amazon also has it at a decent price.

  9. Aww, I wish I had found this 2 days ago! I made GF blueberry muffins at the request of my hubby and they were kind of a flop…these ones look great! I think I needed more baking powder and moisture in my recipe. I will try this one next time :) Thanks for sharing!

  11. What is BB’s/ The only place I can find Xantham Gum is my local grocery store and it is expensive.

      It’s a grocery outlet I have in my area. There are several locations, but only in PA. You might scour your phone book (or Google!) to see if you have a grocery outlet in your area. I know I’m VERY fortunate with mine, not everyone has them nearby!
