These are SOOOO good. You would never know there is no wheat. You just have to plan ahead the night before and prep them (takes 2 minutes!)
Place in blender and blend at high speed for about 3 minutes, the following:
- 1 cup yogurt thinned with a little water, or 1 cup buttermilk (use a little more for waffles). You can also try apple juice if dairy is a problem, or any other kind of non-dairy milk.
- 1 T. olive oil
- ½ cup uncooked whole or rolled oats (NOT flour)
- ½ cup whole uncooked buckwheat groats
You may need to add some liquid while doing this to keep a vortex going.
Put the lid on the blender and let it stand at room temperature overnight. Preheat griddle on medium high (right around 350) or waffle iron at highest temperature. Just before baking, add and re-blend for 1-3 more minutes until smooth:
- 1 egg
- Additional liquid (as needed to keep batter churning – it will seem somewhat runny, but it just makes them lighter – they cook up great!)
- 1 teaspoon baking soda
- 1/2 teaspoon salt
Bake on hot griddle. These are so light and fluffy, NOT at all heavy like most GF breads. Hope you enjoy as much as we do!
