For those of you waiting to see what I did with my cauliflower from this post, here you go!
And by the way, I got a comment from a reader in Hawaii, who said that she can pretty well count on paying $10 for a head of cauliflower. Yikes! So first off, I want to say how grateful I am that I live in an area where produce is not only accessible, but inexpensive at times during the year. And second, if it costs you that much for cauliflower, then this is not going to be a frugal recipe for you. Depending where you live, you will have to rethink what is frugal in your own household. I am sure my Hawaiian readers can get a much better deal, for example, on coconut milk and pineapple than I can.
OK, on to the recipe! You will need:
- 1 large cauliflower
- 3 cups chicken broth
- 1/4 cup butter or margarine
- 1/4 cup chopped onion
- 1/4 cup GF flour mix
- 1/2 t. salt
- 1/8 t. pepper
- 2 cups milk
- 2 cups grated cheese (cheddar and colby are especially good)
Cook cauliflower in chicken stock until tender. Do not drain.
Cool a bit. (I actually did this days ago and kept it in the refrigerator.) Run through blender to desired texture. Put into a large soup pot.
Melt butter in saucepan. Add onion and sauté until limp. Do not brown. Mix in GF flour mix, salt and pepper.
Add 2 cups of milk and onion mixture to the cauliflower mixture. Heat and stir until it boils and thickens.
Now, comes the fun part. This is what makes this soup shine: These 3 ingredients.
It sounds absolutely unappetizing to this point, but trust me, it will be amazing. Add cheese, stir to heat and melt cheese but DO NOT BOIL.
Then, stir in, to your preference, nutmeg and Allspice. You might have to taste test it to see if you want a bit more. It sounds like such a bizarre combination, but adds a completely unexpected flavor that totally complements the cauliflower.
Garnish with a little cheese and a bit more spice if you want to!
