Today for Cooking With Kayla, we decided to make one of our favorites recipes that we’ve already shared with you: Chocolate Chip Peanut Butter Cookies. Only this time, we made them dairy-free for one of Kayla’s friends. This recipe is our favorite cookie recipe in our home and we make it often. This week, a package from Enjoy Life Foods landed on our doorstep with their Semi-Sweet Chocolate Mega Chunks in it, for us to try out. We very happily decided to make our cookies with the chocolate chunks in them today, and the timing was perfect because Kayla’s dairy-free friend was over, so what better time to make gluten-free, dairy-free cookies? We have used everything in these cookies from mini chocolate chips, to M&M’s, to chopped up candy bars, so today we used mega chunks!
Here’s our recipe. Hand-mix together the following:
- 1 cup peanut butter (both chunky and creamy work great!!)
- 1 cup sugar
- 2 eggs
- Then stir in 2 cups chocolate chips (or chunks, or really whatever!)
Preheat oven to 350. Drop by teaspoonfuls onto a baking sheet. I HIGHLY recommend Reynold’s Non-Stick Foil, as the cookies lift right off and there is no scrubbing of pans! Bake for approximately 10 minutes.
