Our Weekly Menu Plan

First off, let me say I’m so sorry about not getting a menu plan up last week. Last weekend was just crazy with the kiddos being sick, and I just kind of threw things together all week. You know that kind of week, when you feel like you’re a few days behind all week long and just chasing your own tail? Hopefully this week we’ll get back into the swing of things!

I have lots of miscellaneous items that I’m going to focus on turning into soups this week. So it’s going to be somewhat of a “soup week” with regard to dinners. Which is okay, because it’s cold!

Sunday – Pancakes and Bacon
Monday – Scrambled Eggs and Sausage
Tuesday – Breakfast Sausage Quiche, Fruit Smoothies
Wednesday – Breakfast Burritos
Thursday – Ham, Egg & Cheese Bake, Fresh Fruit
Friday – Leftover Ham, Egg & Cheese Bake
Saturday – Pancakes and Bacon

Sunday – Leftover Stromboli Biscuits, Carrots and Dip
Monday through Friday – Leftovers
Saturday – Tuna Rice Casserole, Canned Peaches

Sunday – Meatless Refried Bean Enchiladas (recipe coming!), Frozen Veggies
Monday – Beans & Rice, Applesauce
Tuesday – Split Pea Soup, Peanut Butter on Nut Thins
Wednesday – Pumpkin Spice Soup, Carrot Muffins (recipes coming!)
Thursday – Baked Potato Soup (recipe coming!), Salad
Friday – Vegetable Beef Soup, French Bread
Saturday – Chili and Rice, Applesauce

As with all recipes, make sure your ingredients are gluten-free and meet your family’s dietary needs!
