This week for Cooking With Kayla, we did something extra special in honor of Kayla’s upcoming birthday! Since students at her school typically bring in a snack to share with the class on their birthday (which I think is a universal custom)
I made a mini version of our Best Ever Gluten-Free Chocolate Cupcakes, then had Kayla help me whip up the frosting and decorate her cupcakes.
The recipe we used is the one I grew up with in our household. I don’t think we ever had store bought frosting. I maybe tasted it once at a friend’s house and thought it was bitter, probably because I’m so used to the good stuff! And it just so happens that it is naturally gluten-free anyway, and without that terrible “chemical taste”.
Mix the following together in a mixer on medium until smooth and fluffy:
- 2 cups confectioner’s sugar
- 1/2 cup softened butter
- 1 teaspoon vanilla
- 3 tablespoons milk (any kind)
After mixing, we put the frosting into one of my favorite kitchen tools, my Pampered Chef Easy Accent Decorator. I think it might be a discontinued item at this point actually, but mine is still alive and kicking and I never frost cupcakes without it! Even though it is chipped in several places and falling apart.
It took Kayla a little while to get used to using it, but caught on pretty quickly and did a great job frosting her cupcakes!
And of course, after the cupcakes were all done, the girls enjoyed “licking the beaters” as I remember fondly calling it. Kayla of course wanted to lick BOTH beaters herself, plus the spatula, but we limited it to one.
Hope you enjoy this delicious Buttercream Frosting next time you make cupcakes. Or cake. Or really anything that requires frosting on top! This recipe makes enough frosting for a 9×13 cake or 24 cupcakes.

Thanks for sharing the great recipe. I added a touch of cocoa to mine and it tasted great with my chocolate cake. I had forgotten just how tasty buttercream icing is!
